How to Make Chicken Caesar Pasta Salad

  • Bring a large pot of salted water to a boil. Add your choice of pasta and cook until al dente, about 8-10 minutes. Drain and set aside to cool.
  • Season your chicken breasts with salt and pepper. Grill or pan-sear them on medium heat until fully cooked, approximately 6-7 minutes each side. Once done, slice or cube the chicken into bite-sized pieces.
  • Take fresh romaine lettuce, wash it under cold water, and chop it into manageable bite-sized pieces.
  • In a bowl, whisk together the Caesar dressing ingredients or simply stir your favorite store-bought version until well combined.
  • In a large mixing bowl, toss together the cooled pasta, chicken, chopped romaine, croutons, and Parmesan cheese. Drizzle with dressing and mix well.
  • Cover the bowl and refrigerate for at least 30 minutes.
  • Once ready to enjoy, serve the salad cold, optionally topping with extra Parmesan, freshly cracked black pepper, and lemon wedges.
