Instructions

How to Make Vibrant Healthy Winter Salad

  • Preheat your oven to 350°F. Spread the pecan halves on a baking sheet and bake for 5-10 minutes until fragrant and slightly golden.
  • Thinly slice the red onion and soak in cold water for about 10 minutes, then drain and pat dry.
  • Cut the pomegranate in half and squeeze to extract seeds, measuring 1/2 cup.
  • In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, kosher salt, and black pepper.
  • In a large salad bowl, toss together the chopped kale and drained onion slices. Pour in the dressing and toss well.
  • Before serving, sprinkle with the toasted pecans, pomegranate seeds, crumbled feta, and fresh parsley. Toss lightly to combine.
