How to Make Vibrant Healthy Winter Salad
Preheat your oven to 350°F. Spread the pecan halves on a baking sheet and bake for 5-10 minutes until fragrant and slightly golden.
Thinly slice the red onion and soak in cold water for about 10 minutes, then drain and pat dry.
Cut the pomegranate in half and squeeze to extract seeds, measuring 1/2 cup.
In a mixing bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, kosher salt, and black pepper.
In a large salad bowl, toss together the chopped kale and drained onion slices. Pour in the dressing and toss well.
