How to Make Decadent Brown Butter Coffee Toffee Cookies
Melt 10 tablespoons of unsalted butter in a saucepan over medium heat for about 5 minutes. Stir occasionally until it turns a deep amber color, then allow to cool for 10 minutes.
Immediately after browning the butter, stir in 2 tablespoons of espresso powder.
In a large bowl, combine the cooled brown butter, ½ cup granulated sugar, and ½ cup packed brown sugar using a mixer until smooth and glossy.
Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
