How to Make Decadent Brown Butter Coffee Toffee Cookies

  • Melt 10 tablespoons of unsalted butter in a saucepan over medium heat for about 5 minutes. Stir occasionally until it turns a deep amber color, then allow to cool for 10 minutes.
  • Immediately after browning the butter, stir in 2 tablespoons of espresso powder.
  • In a large bowl, combine the cooled brown butter, ½ cup granulated sugar, and ½ cup packed brown sugar using a mixer until smooth and glossy.
  • Beat in 1 egg and 1 teaspoon of vanilla extract until well combined.
  • In another bowl, whisk together 1¾ cups of flour, ½ teaspoon of baking powder, and a pinch of salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined. Fold in ½ cup of toffee bits.
  • Cover the dough and refrigerate for about 30 minutes.
  • Preheat your oven to 350°F. Scoop tablespoon-sized portions onto a parchment-lined baking sheet, spacing them a few inches apart. Bake for 12-14 minutes.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
