Preparation
Prepare Oven: Start by lining the bottom of your oven with foil to catch any drips from the pie.
Macerate Apricots: In a mixing bowl, combine the halved apricots with sugar and flour. Let sit for 30 minutes.
Preheat Oven: Preheat oven to 425°F (220°C). Roll out the first disc of pie crust into a 9-inch pie plate.
Assemble Filling: Evenly distribute the apricot mixture in the prepared crust and add small pieces of butter on top.
Top Crust and Seal: Place the second disc of pie crust over the filling, crimp edges to seal, brush with egg yolk, and sprinkle with sugar.
Bake: Bake at 425°F for 15 minutes, reduce to 350°F (175°C) and bake for an additional hour until golden brown.
Cooling: Allow pie to cool before slicing.
