  • Combine the chopped dark chocolate and butter in a heatproof bowl over simmering water. Stir until melted, then add vanilla extract.
  • In another bowl, beat the room-temperature eggs, caster sugar, and demerara sugar on high speed for about 5 minutes.
  • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold in the chocolate chips.
  • Fold the melted chocolate mixture into the whipped eggs and sugars until just combined.
  • Fold the dry ingredients into the wet mixture carefully, maintaining the fudgy texture.
