Ingredients

For the Sauce

  • 1/4 cup Soy Sauce Substitute with tamari for gluten-free option
  • 2 tablespoons Rice Vinegar White vinegar can be used as a substitute
  • 2 tablespoons Vegan Honey or Maple Syrup Agave syrup can serve as an alternative
  • 1 tablespoon Sesame Oil Other oils can be used, but flavors will differ
  • 1 tablespoon Cornstarch Arrowroot powder is a suitable alternative

For the Veggies

  • 1 bunch Broccolini Can be replaced with regular broccoli or snap peas
  • 1 medium Red Bell Pepper Other colored bell peppers can be interchanged
  • 1 medium Green Bell Pepper Can be omitted if preferred
  • 1 medium Yellow Bell Pepper Substitute with more red or orange bell peppers
  • 8 ounces Mushrooms Any variety like shiitake or cremini can be used
  • 2 stalks Green Onion Chives can be a good substitute
  • 1 tablespoon Sesame Seeds Omit if desired, or use crushed peanuts

Instructions

Preparation

  • In a medium bowl, combine soy sauce, rice vinegar, vegan honey (or maple syrup), and cornstarch. Whisk until smooth.
  • Slice the broccolini, red, green, and yellow bell peppers, and mushrooms. Chop the green onions for garnish.
  • Heat sesame oil in a wok over medium-high heat until shimmering.
  • Add broccolini, bell peppers, and mushrooms to the hot wok. Stir-fry for 7 minutes until slightly softened.
  • Pour the sauce mixture over the veggies and stir continuously for 2-3 minutes until thickened.
  • Serve onto plates, garnishing with reserved green onions and sesame seeds. Best enjoyed immediately.

Notes

Optional: Toss in crushed peanuts for added flavor. Stir fries are best served immediately to maintain crunch.
