Instructions
Preparation
In a medium bowl, combine soy sauce, rice vinegar, vegan honey (or maple syrup), and cornstarch. Whisk until smooth.
Slice the broccolini, red, green, and yellow bell peppers, and mushrooms. Chop the green onions for garnish.
Heat sesame oil in a wok over medium-high heat until shimmering.
Add broccolini, bell peppers, and mushrooms to the hot wok. Stir-fry for 7 minutes until slightly softened.
Pour the sauce mixture over the veggies and stir continuously for 2-3 minutes until thickened.
Serve onto plates, garnishing with reserved green onions and sesame seeds. Best enjoyed immediately.
Notes
Optional: Toss in crushed peanuts for added flavor. Stir fries are best served immediately to maintain crunch.
