For the Potatoes

  • 2 lb Yukon Gold Potatoes Crispy texture when roasted.

Instructions

Preparation

  • Blend the lemon peel, juice, garlic, olive oil, rosemary, and seasoning in a food processor until you achieve a rough consistency.
  • Generously rub the marinade all over the leg of lamb and insert rosemary and pieces of garlic into the cuts.
  • Marinate in the fridge for 3 to 12 hours, if possible.
  • Preheat your oven to 250°F (120°C) and cut the Yukon gold potatoes into quarters, tossing them in olive oil, lemon juice, and seasonings.
  • Arrange the marinated lamb on top of the potatoes in a spacious roasting pan.
  • Cover the roasting pan with aluminum foil and slow-roast in the oven for about 7 hours.
  • Uncover and broil for a few minutes towards the end for a crispier exterior.
  • Check the potatoes; if needed, roast longer until golden brown and crisp.
  • Serve the succulent lamb alongside the crispy potatoes.
