Ingredients

Chicken Marinade

  • 2 pounds boneless, skinless chicken breasts Substitute with chicken thighs for richer flavor.

  • 1 teaspoon ground cumin Coriander can be used as an alternative.

Wrap Ingredients

  • 4 pieces whole wheat tortillas or wraps Can substitute with gluten-free wraps if needed.
  • 1 cup cherry tomatoes, halved Regular tomatoes can be used in bite-sized pieces.
  • 1 cup cucumber, diced Zucchini can be used as a substitute.
  • 1/2 cup red onion, thinly sliced Shallots can be a milder option.
  • 1/2 cup feta cheese, crumbled Can be replaced with goat cheese for a different flavor.
  • 1/3 cup kalamata olives, sliced Any black olive can serve as a substitute.
  • 1/2 cup hummus Tahini can be used for a different texture.
  • 2 cups mixed greens (spinach or arugula) Any leafy green works.
  • 1 whole juice of lemon Lime juice is an option.

  • to taste tzatziki sauce Provides creaminess and flavor; can be purchased or homemade.

Preparation Instructions

  • Preheat your grill or stovetop grill pan over medium-high heat.
  • Combine the olive oil, oregano, cumin, minced garlic, salt, and pepper in a bowl to create the marinade.
  • Coat the chicken breasts with the marinade and marinate for at least 15 minutes.
  • Grill the chicken for 6–7 minutes on each side, or until the juices run clear and the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before slicing.
  • Warm the tortillas in a pan or microwave. Spread a tablespoon of hummus on each tortilla.
  • Distribute the sliced grilled chicken, halved cherry tomatoes, diced cucumbers, red onions, crumbled feta, olives, and mixed greens across each wrap.
  • Squeeze some lemon juice over the filling.
  • Roll each wrap tightly, folding in the sides to keep the ingredients secure.
  • Slice each wrap in half and serve immediately, optionally pairing it with tzatziki sauce.

Notes

Store leftover wraps in an airtight container for up to 3 days, and freeze for up to 2 months. Reheat in the microwave or on the grill.
