Ingredients

Marinade Ingredients

  • 4 chops Lamb Chops Tender cuts with good fat
  • 1 whole Jalapeño Pepper Fresh with smooth skin
  • 3 cloves Garlic Finely minced
  • 1/2 cup Fresh Mint Vibrant green leaves
  • 1/4 cup Extra-Virgin Olive Oil Preferred for taste
  • 1 tsp Kosher Salt Essential for brining
  • 1/2 tsp Black Pepper Freshly ground
  • 1/4 tsp Sugar Balances heat from jalapeño
  • 1 tbsp Malt Vinegar Substitute with any vinegar

Minted Pea Salad Ingredients

  • 1 cup Frozen Peas Thawed
  • 1 handful Mint Roughly chopped
  • 1 pinch Kosher Salt
  • 1 pinch Black Pepper
  • 1 pinch Sugar

Instructions

Marinade Preparation

  • In a food processor, combine the jalapeño, garlic, fresh mint, olive oil, kosher salt, black pepper, sugar, and malt vinegar. Blend until smooth.
  • Place your lamb chops in a resealable bag and pour in the marinade. Seal and let coat thoroughly. Marinate for at least 1 hour at room temperature or overnight in the fridge.

Cooking the Lamb

  • Preheat your skillet over medium heat. Brush off excess marinade from the lamb chops.
  • Place the lamb chops in the skillet and cook on one side for 1-2 minutes until charred. Flip and cook to desired doneness.

Pea Salad Preparation

  • In the same skillet, add thawed peas and season with salt, black pepper, and sugar. Warm for 2-3 minutes, then stir in the chopped mint.
  • Plate the lamb chops alongside the minted pea salad. Drizzle with remaining marinade if desired.

Notes

Marinate overnight for best flavor. Don’t overcrowd the skillet while searing the lamb.
