Ingredients

For the Salad

  • 6 cups Brussels Sprouts thinly sliced
  • 2 tablespoons Extra Virgin Olive Oil
  • Salt and Black Pepper to taste
  • 1 tablespoon Balsamic Vinegar
  • 6 tablespoons Salted Butter
  • 1.5 cups Panko Breadcrumbs plain for versatility
  • 1/4 cup Pine Nuts toasted first for nuttiness
  • 2 cloves Garlic grated
  • 3 ounces Prosciutto torn
  • 1 cup Grated Manchego or Parmesan Cheese
  • 1/2 cup Dried Cranberries

For the Dressing

  • 1/2 cup Tahini
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Lemon Juice
  • 1 tablespoon Worcestershire Sauce
  • 1-2 cloves Additional Garlic grated

Instructions

Preparation

  • Preheat the Oven: Set your oven to 425°F (220°C).
  • Prepare the Brussels Sprouts: Toss the Brussels sprouts in a bowl with olive oil, salt, and black pepper. Spread them on a baking sheet and bake for 15 minutes.
  • Add Flavorings: Drizzle with balsamic vinegar and add butter. Return to the oven for 10 more minutes.
  • Toast Panko Mixture: On a separate sheet, combine Panko, pine nuts, grated garlic, remaining butter, and salt. Add torn prosciutto and bake for 10 minutes.
  • Make the Dressing: In a blender, combine tahini, olive oil, lemon juice, Worcestershire sauce, and garlic. Blend until smooth.
  • Assemble the Salad: In a bowl, combine roasted sprouts, cheese, dressing, cranberries, and breadcrumb mixture. Toss and serve.

Notes

Garnish with extra toasted pine nuts for added crunch. Store leftovers separately to maintain crispiness.
