  • Heat olive oil in a large deep pan over medium heat. Sauté red onion, garlic, and red bell pepper for 3-4 minutes, until the onion becomes translucent and fragrant.
  • Incorporate the diced zucchini and sliced mushrooms into the pan. Cook for an additional 1-2 minutes, stirring occasionally, until the vegetables soften slightly.
  • Stir in the tomato paste and Italian seasoning. Pour in the vegetable stock and pasta sauce, mixing until well combined, then bring to a boil over medium-high heat.
  • Add the uncooked short pasta to the pot, stirring well to combine. Cover and simmer on medium-low heat for about 10 minutes, stirring occasionally, until the pasta is al dente.
  • Once the pasta is cooked, gently stir in the light mozzarella. Cover for 1-2 minutes, allowing the cheese to melt and create a creamy texture.
  • Taste your dish and adjust seasoning with salt and black pepper. Divide the pasta into bowls and optionally top with grated Parmesan or your favorite cheese.
