  • 0.25 cup milk any variety
  • 0.25 cup unsalted butter melted and cooled slightly

  • 1.5 cups all-purpose flour properly measured
  • 0.33 cup sugar brown sugar can be used
  • 1 teaspoon pumpkin pie spice or a homemade blend
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

For the Topping (Optional)

  • 0.25 cup sugar for sprinkling
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon pumpkin pie spice
  • 2 tablespoons unsalted butter melted and cooled slightly

Instructions

How to Make Quick Easy Baked Pumpkin Donuts

  • Preheat your oven to 375°F (190°C) and grease two 6-cup donut pans.
  • In a large bowl, whisk together pumpkin puree, milk, melted butter, beaten egg, and vanilla extract until smooth.
  • Gradually add flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt to the wet mixture and stir gently until just combined.
  • Fill each donut mold about ¾ full with batter to allow room for rising.
  • Bake for 12-14 minutes until golden brown and a toothpick comes out clean.
  • Allow donuts to cool for 1 minute in the pan, then transfer to a wire rack and cool longer if desired. Optionally, dip in melted butter followed by sugar mixed with cinnamon and pumpkin pie spice.
