Instructions
Preparation
Begin by dicing the chicken thighs into small pieces. Mince the garlic and ginger, then beat the eggs in a bowl. Break apart any clumps in your leftover jasmine rice.
Cooking
In a large skillet, heat 1 tablespoon of neutral oil over medium-high heat. Add the diced chicken and brown until golden, approximately 5-7 minutes.
Drizzle half of the Japanese BBQ sauce over the chicken, toss to coat, and set aside.
In the same skillet, pour in the sesame oil. Once hot, add the diced onion, minced garlic, and ginger. Sauté for about 1 minute until fragrant.
Push the aromatics to one side of the skillet. Pour in the beaten eggs and scramble them gently until just starting to set, about 2 minutes.
Add the cooked jasmine rice to the skillet, breaking apart any leftover clumps. Pour in the remaining Japanese BBQ sauce and soy sauce, mixing thoroughly.
Stir in the frozen peas and carrots, followed by the browned chicken. Mix it all together and heat through, sprinkling salt and pepper to taste.
Garnish your fried rice with sliced green onions for that final touch. Serve hot.
Notes
Add a drizzle of extra BBQ sauce before serving for an extra flavor boost.
