Ingredients

For the Chicken

  • 2 tablespoons Sesame Oil Can be replaced with light olive oil if preferred.

For the Veggies

  • 1 cup Frozen peas and carrots mix Fresh mixed vegetables can also work.
  • 3 stalks Green onions, sliced Can substitute with chives.

For Cooking

  • 1 tablespoon Neutral oil Can use canola oil.
  • 2 large Eggs, lightly beaten Ensure eggs are whisked well.
  • to taste Salt and pepper Adjust seasoning to taste.

Instructions

Preparation

  • Begin by dicing the chicken thighs into small pieces. Mince the garlic and ginger, then beat the eggs in a bowl. Break apart any clumps in your leftover jasmine rice.

Cooking

  • In a large skillet, heat 1 tablespoon of neutral oil over medium-high heat. Add the diced chicken and brown until golden, approximately 5-7 minutes.
  • Drizzle half of the Japanese BBQ sauce over the chicken, toss to coat, and set aside.
  • In the same skillet, pour in the sesame oil. Once hot, add the diced onion, minced garlic, and ginger. Sauté for about 1 minute until fragrant.
  • Push the aromatics to one side of the skillet. Pour in the beaten eggs and scramble them gently until just starting to set, about 2 minutes.
  • Add the cooked jasmine rice to the skillet, breaking apart any leftover clumps. Pour in the remaining Japanese BBQ sauce and soy sauce, mixing thoroughly.
  • Stir in the frozen peas and carrots, followed by the browned chicken. Mix it all together and heat through, sprinkling salt and pepper to taste.
  • Garnish your fried rice with sliced green onions for that final touch. Serve hot.

Notes

Add a drizzle of extra BBQ sauce before serving for an extra flavor boost.
