  • 3 Large Eggs

  • ¾ cup Heavy Cream
  • ¼ cup Powdered Sugar
  • ½ teaspoon Vanilla Extract (for whipped cream)

Instructions

How to Make Ultimate Pumpkin Cheesecake

  • Preheat your oven to 350°F (175°C).
  • In a 9-inch springform pan, combine graham cracker crumbs and melted butter, pressing firmly into the bottom. Chill in the fridge.
  • In a mixing bowl, beat softened cream cheese and both sugars until smooth and creamy, scraping the sides of the bowl.
  • Fold in sour cream, vanilla extract, pumpkin puree, and pumpkin pie spice until fully combined.
  • Add eggs one at a time, mixing well after each addition.
  • Pour cheesecake filling over the chilled crust, smoothing the top. Bake for about 40 minutes or until edges are set.
  • Allow cheesecake to cool to room temperature, then cover and refrigerate for at least 6 hours or overnight.
  • Beat heavy cream with powdered sugar, vanilla extract, and cinnamon until stiff peaks form to make whipped cream.
  • Top the chilled cheesecake with whipped cream, spreading evenly before slicing and serving.
