Instructions
How to Make Ultimate Pumpkin Cheesecake
Preheat your oven to 350°F (175°C).
In a 9-inch springform pan, combine graham cracker crumbs and melted butter, pressing firmly into the bottom. Chill in the fridge.
In a mixing bowl, beat softened cream cheese and both sugars until smooth and creamy, scraping the sides of the bowl.
Fold in sour cream, vanilla extract, pumpkin puree, and pumpkin pie spice until fully combined.
Add eggs one at a time, mixing well after each addition.
Pour cheesecake filling over the chilled crust, smoothing the top. Bake for about 40 minutes or until edges are set.
Allow cheesecake to cool to room temperature, then cover and refrigerate for at least 6 hours or overnight.
Beat heavy cream with powdered sugar, vanilla extract, and cinnamon until stiff peaks form to make whipped cream.
Top the chilled cheesecake with whipped cream, spreading evenly before slicing and serving.
