Ingredients

For the Noodles

  • 8 ounces Lo Mein Noodles Fresh or dried

For the Sauce

  • 3 tablespoons Soy Sauce Low-sodium preferred
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Sriracha Adjust for heat preference

For the Eggs

  • 2 large Large Eggs Scrambled gently
  • 1 tablespoon Butter Or olive oil for healthier option
  • 1 teaspoon Crushed Red Pepper Adjust to taste

For Garnish

  • 2 tablespoons Green Onion Chopped
  • Fresh Cilantro Optional

Instructions

Preparation

  • Combine brown sugar, soy sauce, and sriracha in a bowl until smooth, then set aside.
  • In a pot of salted boiling water, cook lo mein noodles according to package instructions until tender. Drain and set aside.
  • Whisk large eggs and cook in a skillet with butter and crushed red pepper over medium heat until just set.
  • Add the drained noodles to the skillet with the scrambled eggs and pour the sauce over. Toss together until evenly coated.
  • Remove from heat and top with fresh cilantro and chopped green onions.
  • Serve immediately to enjoy the best texture and flavor.

Notes

Optional: Drizzle extra sriracha on top for an extra kick.
