In a mixing bowl, combine olive oil, minced garlic, lemon juice, dried oregano, ground cumin, paprika, salt, and black pepper. Add the chicken, ensuring it's coated evenly. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.
In another bowl, whisk together Greek yogurt, crumbled feta cheese, grated cucumber, garlic, chopped dill, chopped mint, additional lemon juice, salt, and pepper. Mix well and chill the sauce for about 30 minutes.
Preheat grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until fully cooked. Let the chicken rest for 5 minutes before slicing it thinly.
Grill pita bread for about a minute on each side or until it’s warm and pliable.
Lay the sliced chicken onto the warmed pita bread. Drizzle generously with tzatziki, top with red onion, tomatoes, and lettuce, roll it up tightly, and enjoy immediately!
