Ingredients

For the Dressing

  • 6 filets Oil-Packed Anchovy Fillets can be omitted for a vegetarian option
  • 1 clove Garlic fresh for the best flavor
  • 0.25 cup Fresh Lemon Juice
  • 2 tsp Dijon Mustard
  • to taste tsp Kosher Salt
  • 1 yolk or 2 Tbsp Large Egg Yolk or Mayonnaise mayonnaise is a quick substitute
  • 0.5 cup Extra-Virgin Olive Oil opt for high-quality oil for the best flavor
  • 3 Tbsp Grated Parmesan plus more for serving

For the Salad

  • 2 medium heads Broccoli about 1½ lb
  • 0.25 head Savoy or Napa Cabbage slice finely for better mixing
  • 1 tsp Finely Grated Lemon Zest
  • to taste tsp Freshly Cracked Black Pepper

Instructions

Dressing Preparation

  • Mash the anchovies and garlic into a smooth paste. Whisk in the lemon juice, Dijon mustard, and kosher salt. Blend in the egg yolk or mayonnaise, and slowly drizzle in the olive oil while whisking until emulsified. Fold in the grated Parmesan.

Salad Preparation

  • Trim broccoli ends, peel dark skin from stems, and cut into bite-sized pieces. Slice stems thinly and place in a large bowl.
  • Cut cabbage crosswise into about 2 cups of thin slices and add to the broccoli.
  • Mix broccoli and cabbage with the dressing until evenly coated. Allow to rest for 10 minutes.
  • Before serving, sprinkle shaved Parmesan, lemon zest, and black pepper over the top.
  • Serve in a beautiful dish and drizzle with any remaining dressing.

Notes

For added crunch, consider tossing in some toasted nuts or seeds before serving. Store dressing separately until just before serving to keep greens crisp.
