Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C) and lightly spray a baking dish with olive oil.
  • Sauté scallions in a pan with 1 tsp of olive oil for 1-2 minutes until soft. Add half of the chopped spinach until it wilts. Drain any excess moisture.
  • Repeat the sautéing process with the remaining spinach.
  • Whisk together flour, baking powder, and salt in a large bowl. Combine with milk, beaten eggs, and melted butter until smooth.
  • Fold in the sautéed spinach mixture, dill, mozzarella, and feta until just combined.
  • Pour the mixture into the prepared baking dish, sprinkle with grated Parmesan, and bake for 40-45 minutes.
  • Cool for about 15 minutes before slicing into squares.
