Ingredients

For the Bread

  • 1 loaf Baguette A fresh baguette with a crisp crust

For the Toppings

  • 2 medium Peach Ripe peaches that yield slightly to pressure
  • 1 cup Ricotta Fresh whole milk ricotta
  • 1/4 cup Basil Fresh basil leaves

  • Preheat Grill to medium-high heat.
  • Slice the peaches into wedges and brush them with olive oil. Grill until caramelized, about 2-3 minutes on each side. Allow to cool and chop into bite-sized pieces.
  • Slice the baguette and toast pieces on the grill until crisp and golden brown.
  • In a bowl, mix the ricotta with remaining olive oil until creamy. Add salt to taste if desired.
  • Spread whipped ricotta on each toasted baguette slice and top generously with grilled peach pieces.
  • Sprinkle with chopped pistachios and torn basil leaves.
  • Drizzle with balsamic vinegar reduction and a sprinkle of flaky salt. Serve immediately.

Notes
