Ingredients

For the Salad

  • 5 cups baby spinach
  • 1 medium honeycrisp apple can substitute with Granny Smith
  • 1/4 medium red onion thinly sliced
  • 1 cup mandarin oranges segments
  • 1/2 cup candied walnuts can use candied pecans
  • 1/2 cup pomegranate seeds can substitute with dried cranberries
  • 4 oz gorgonzola cheese can substitute with feta

For the Dressing

  • 2 cloves garlic minced
  • 2 tbl champagne vinegar can substitute with apple cider vinegar
  • 1/3 cup olive oil good quality recommended
  • 1 tbl fresh thyme or use dried thyme in smaller amounts
  • 1 tbl Dijon mustard omit if milder dressing desired
  • 1 tbl honey can use agave syrup
  • to taste salt

Instructions

Preparation Steps

  • In a small bowl, whisk together minced garlic, champagne vinegar, olive oil, fresh thyme, Dijon mustard, honey, and a pinch of salt.
  • In a large bowl, toss together baby spinach, sliced honeycrisp apple, and thinly sliced red onion.
  • Scatter mandarin orange segments, candied walnuts, and pomegranate seeds over the leafy greens.
  • Crumble gorgonzola cheese evenly on top of the salad.
  • Drizzle the prepared dressing over the salad and toss gently to coat.
  • Plate the salad and serve immediately, optionally garnishing with additional pomegranate seeds.

Notes

For best results, dress the salad just before serving to maintain freshness.
