Ingredients

  • 4 cups Arugula Fresh and vibrant leaves
  • 2 cups Crisp Apples Granny Smith or Honeycrisp recommended
  • 1 small Red Onion Thinly sliced
  • 1 cup Raw Pecans Toasted for enhanced flavor
  • 1/2 cup Dried Cranberries Optional for added sweetness

For the Dressing

  • 3 tablespoons Lemon Juice Freshly squeezed
  • 2 tablespoons Maple Syrup Natural sweetener
  • 1/4 cup Olive Oil Extra-virgin recommended
  • 1 teaspoon Sea Salt To taste

Instructions

Preparation

  • Preheat your oven to 350°F (176°C). Spread the raw pecans on a baking sheet and toast them for 8-10 minutes, or until fragrant and golden brown.
  • In a large mixing bowl, combine the fresh arugula, sliced crisp apples, and thinly sliced red onion. If adding dried cranberries, sprinkle them in now.
  • In a small bowl, whisk together the fresh lemon juice, maple syrup, extra-virgin olive oil, sea salt, and black pepper until well combined.
  • Add the toasted pecans to the salad mixture. Drizzle the dressing over everything and toss gently to combine. Serve immediately.
