These Delicious Creamy Lemon-Blueberry Cream Cheese Bars are a refreshing dessert with a buttery crust and a creamy filling, perfect for summer gatherings.
Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a food processor, combine graham crackers, sugar, and salt. Pulse until sandy, then mix in melted butter. Reserve 1/4 cup of this mixture.
Press the crust mixture into the prepared pan and bake for 12–15 minutes or until golden brown. Let it cool slightly.
In a bowl, beat cream cheese and granulated sugar until smooth. Add lemon zest, lemon juice, vanilla extract, and salt, mixing well. Incorporate eggs one at a time.
Gently fold in the blueberries. Pour filling over the crust and sprinkle with reserved blueberries and crust mixture. Bake for 30–35 minutes.
Cool for 2 hours at room temperature, then refrigerate for at least 3 hours before slicing.
Dust with powdered sugar before serving, if desired.
Notes
