Ingredients

For the Chicken

  • 2 pieces Chicken Breasts (or Thighs) Skinless and boneless
  • 1/4 cup Flour Lightly dusted on chicken
  • 2 tablespoons Olive Oil Extra virgin recommended

For the Pasta

  • 8 oz Dried Pasta (Spaghetti or Fettuccine)
  • 1 teaspoon Salt For boiling water

For the Sauce

  • 3 cloves Garlic Finely sliced
  • 1/2 cup White Wine Dry variety
  • 70 grams Cold Butter Cut into cubes
  • 1/2 teaspoon Black Pepper Freshly ground
  • 60 grams Parmesan Very finely grated
  • 1/2 cup Flat-Leaf Parsley Finely chopped

Instructions

Cooking Instructions

  • Fill a large pot with salted water and bring it to a boil. Add dried pasta and cook until al dente, about 1 minute less than package directions. Reserve one cup of pasta water before draining.
  • Take chicken and flatten between plastic wrap to 1-1.5 cm thick. Season with salt and pepper, and dust lightly with flour.
  • In a large frying pan, heat olive oil over medium-high heat. Sear chicken for about 2 minutes on each side until golden brown and cooked through. Set aside covered with foil.
  • In the same pan, lower heat and add another tablespoon of olive oil. Sauté garlic for about 30 seconds, then pour in white wine and let reduce by half (about 4 minutes).
  • Whisk in cold butter cubes one at a time until the sauce is thick and glossy. Add a splash of reserved pasta water if too thick.
  • Toss cooked pasta in the sauce until well coated. Add finely grated parmesan until melted. Stir in chopped parsley and plate pasta with sliced chicken on top.

Notes

A sprinkle of red pepper flakes can be added for extra heat. Store leftovers in an airtight container for up to 3 days.
