  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine granulated sugar, brown sugar, all-purpose flour, ground cinnamon, ground ginger, and ground nutmeg. Stir until well blended.
  • Toss the Granny Smith apple slices with lemon juice, then coat them evenly with the sugar mixture.
  • Lay one pie crust in a 9-inch pie pan. Pour the apple filling into the crust and dot with butter. Place the second crust on top; seal the edges and cut slits for steam to escape.
  • Brush the top crust with whisked egg white for a glossy finish. Sprinkle a little extra sugar on top. Cover edges with foil and bake for 25 minutes; then remove foil and bake for an additional 20 minutes.
  • Allow the pie to cool slightly on a wire rack for at least 15 minutes. Serve warm with vanilla ice cream.
