Instructions
Instructions
Begin by blending fresh basil leaves, pine nuts, parmesan cheese, and garlic cloves in a food processor. Gradually add olive oil, lemon juice, and a pinch of salt, pulsing until the mixture is smooth and creamy. Refrigerate for enhanced flavors.
If you're making your own dough, follow your favorite recipe until ready. For store-bought dough, simply roll it out on a floured surface and allow it to rest for a few minutes.
While your dough rests, preheat your oven to 475°F (246°C). Give it at least 15 to 20 minutes to ensure a perfectly crispy crust.
Punch down the dough and roll it out into a roughly 12-inch circle, about ½-inch thick. Leave a slightly thicker edge for the crust.
Brush the surface of the dough with olive oil. Spread a generous layer of your homemade pesto on top, sprinkle shredded mozzarella cheese evenly, and add optional cherry tomatoes for sweetness. Finish with salt and freshly ground black pepper to taste.
Slide your pizza into the preheated oven and bake for 14-15 minutes or until the crust is golden brown and the cheese is bubbly. Add fresh basil and any optional garnishes before slicing.
Notes
Let your pesto sit in the fridge for at least 30 minutes for best flavor enhancement and avoid overcrowding the pizza with toppings to keep the crust crispy.
