Preparation
In a mixing bowl, whisk cold mascarpone cheese until creamy and lump-free for about 30-60 seconds.
In a heatproof bowl, whisk together egg yolks and sugar over a double boiler at low heat for exactly 2 minutes, until pale and slightly thickened.
Gently fold the egg yolk-sugar mix into the mascarpone, then whisk in salt and vanilla extract.
In a separate bowl, whip chilled heavy cream to medium stiff peaks and fold it into the mascarpone mixture.
Pour cooled coffee into a shallow bowl and quickly dip each ladyfinger, then arrange them in a rectangular dish.
Spread half of the mascarpone mixture over the soaked ladyfingers and repeat with another layer.
Cover and refrigerate for at least 6 hours or overnight.
Dust with cocoa powder before serving.
