  • 100 grams Granulated or Caster Sugar Caster sugar dissolves better.
  • 1 teaspoon Vanilla Extract Opt for pure extract.
  • 1 pinch Salt Balances sweetness.
  • 300 ml Heavy Cream Chilled for fluffiness.

For the Base

  • 24 pieces Ladyfingers Choose crunchy, dry ones.
  • 300 ml Strong Black Coffee Cool before use.

For the Finish

  • 30 grams Cocoa Powder For dusting.

Instructions

Preparation

  • In a mixing bowl, whisk cold mascarpone cheese until creamy and lump-free for about 30-60 seconds.
  • In a heatproof bowl, whisk together egg yolks and sugar over a double boiler at low heat for exactly 2 minutes, until pale and slightly thickened.
  • Gently fold the egg yolk-sugar mix into the mascarpone, then whisk in salt and vanilla extract.
  • In a separate bowl, whip chilled heavy cream to medium stiff peaks and fold it into the mascarpone mixture.
  • Pour cooled coffee into a shallow bowl and quickly dip each ladyfinger, then arrange them in a rectangular dish.
  • Spread half of the mascarpone mixture over the soaked ladyfingers and repeat with another layer.
  • Cover and refrigerate for at least 6 hours or overnight.
  • Dust with cocoa powder before serving.

Notes

For an extra touch, garnish with chocolate shavings before serving.
