Instructions
Preparation
Preheat oven to 425°F (220°C). Place a sheet pan inside to preheat for 10 minutes.
Peel and slice sweet potatoes into even ½-inch rounds.
In a large bowl, toss sweet potato rounds with olive oil, salt, black pepper, and garlic powder.
Lay the seasoned rounds on the hot sheet pan in a single layer. Roast for 12-15 minutes.
Flip each round and roast for another 8-10 minutes. Consider broiling for 1-2 minutes for extra color.
Transfer rounds to a serving platter, drizzle with honey, scatter feta and thyme over top, and optional black pepper.
