For the Rounds

  • 2 large Sweet Potatoes Choose firm, smooth potatoes.
  • 2 tablespoons Olive Oil Helps achieve a crispy texture.
  • 1 teaspoon Salt Use kosher salt for better control.
  • 1 teaspoon Black Pepper Adjust to your spice level.
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a stronger flavor.

For the Topping

  • 1 cup Feta Cheese Can be swapped with goat cheese.
  • 2 tablespoons Fresh Thyme Other herbs like rosemary can also work.
  • 2 tablespoons Honey Consider adding chili flakes for a spicy kick.

Instructions

Preparation

  • Preheat oven to 425°F (220°C). Place a sheet pan inside to preheat for 10 minutes.
  • Peel and slice sweet potatoes into even ½-inch rounds.
  • In a large bowl, toss sweet potato rounds with olive oil, salt, black pepper, and garlic powder.
  • Lay the seasoned rounds on the hot sheet pan in a single layer. Roast for 12-15 minutes.
  • Flip each round and roast for another 8-10 minutes. Consider broiling for 1-2 minutes for extra color.
  • Transfer rounds to a serving platter, drizzle with honey, scatter feta and thyme over top, and optional black pepper.

Notes

Serve with dips like tzatziki or hummus for enhanced flavor.
