Preparation
Mix the chopped cherry blossoms, diced cucumber, and spring onions in a bowl for the salsa.
In a separate bowl, combine chilled soda water with well-sifted flour to make the batter.
Heat vegetable oil in a deep frying pan to around 350°F (175°C).
Dredge cod chunks in cornstarch, then dip them into the prepared batter.
Fry the coated cod pieces in hot oil until golden brown, about 3-4 minutes on each side.
Combine mirin, grated ginger, and soy sauce in a saucepan, and reduce over heat until thickened.
Plate the fried cod, topping with cherry blossom salsa and drizzling with mirin-ginger glaze.
