Ingredients

Tempura

  • 4 fillets Cod Freshness is key; can substitute with haddock or snapper.
  • 1 cup Soda water Chilled for an airy batter.
  • 1 cup All-purpose flour Well-sifted.
  • 1/2 cup Cornstarch For crispy coating.
  • 2 cups Vegetable oil High smoke point.

Blossom Salsa

  • 1 cup Cherry blossoms Lightly brined and chopped.
  • 2 tablespoons Spring onion Finely chopped.
  • 1 medium Cucumber Diced and deseeded.

Mirin Glaze

  • 1/4 cup Mirin Sweet rice wine.
  • 1 tablespoon Ginger Freshly grated.
  • 2 tablespoons Soy sauce For umami flavor.

Instructions

Preparation

  • Mix the chopped cherry blossoms, diced cucumber, and spring onions in a bowl for the salsa.
  • In a separate bowl, combine chilled soda water with well-sifted flour to make the batter.
  • Heat vegetable oil in a deep frying pan to around 350°F (175°C).
  • Dredge cod chunks in cornstarch, then dip them into the prepared batter.
  • Fry the coated cod pieces in hot oil until golden brown, about 3-4 minutes on each side.
  • Combine mirin, grated ginger, and soy sauce in a saucepan, and reduce over heat until thickened.
  • Plate the fried cod, topping with cherry blossom salsa and drizzling with mirin-ginger glaze.

Notes

Serve immediately for the best texture. Avoid reheating in the microwave to maintain crispiness.
