Instructions
Directions
Preheat your oven to 190°C (375°F).
Boil water in a large pot and cook the dried pasta for 1 minute less than the package instructions specify. Drain the pasta and set it aside.
Heat olive oil in a large frying pan over medium heat. Sauté the chopped onion for 4-5 minutes until soft and translucent.
Add the baby chestnut mushrooms, salt, pepper, and garlic to the pan. Sauté for an additional 3-4 minutes until the mushrooms are tender.
Pour in the white wine and let it reduce by half.
Stir in the chicken stock, double cream, shredded chicken, and half of the freshly grated parmesan.
Combine the drained pasta with the creamy sauce in the frying pan.
Transfer the mixture to a large baking dish and sprinkle the remaining cheeses on top.
Bake in the preheated oven for 20-25 minutes until the top is golden brown and bubbling.
Garnish with freshly chopped parsley before serving.
Notes
Serve with a side of garlic bread for extra indulgence.
