Ingredients

For the Pasta

  • 12 oz Dried Pasta Penne or rotini is preferred.

For the Sauce

  • 2 tbsp Olive Oil Extra virgin recommended.
  • 1 medium Onion Yellow onion for sweetness.
  • 8 oz Baby Chestnut Mushrooms Substitute with button mushrooms if preferred.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Freshly ground preferred.
  • 2 cloves Garlic Use fresh.
  • 1/2 cup White Wine Dry white wine works best.
  • 2 cups Chicken Stock Homemade is richer.
  • 1 cup Double Cream Essential for creaminess.

For the Chicken and Cheese

  • 2 cups Cooked Skinless Chicken Breasts Shred or dice as preferred.
  • 1/2 cup Parmesan Cheese Freshly grated.
  • 1 cup Strong Cheddar Freshly grated.
  • 1 cup Mozzarella Cheese For gooey texture.

For Garnish

  • 1/4 cup Parsley Freshly chopped.

Instructions

Directions

  • Preheat your oven to 190°C (375°F).
  • Boil water in a large pot and cook the dried pasta for 1 minute less than the package instructions specify. Drain the pasta and set it aside.
  • Heat olive oil in a large frying pan over medium heat. Sauté the chopped onion for 4-5 minutes until soft and translucent.
  • Add the baby chestnut mushrooms, salt, pepper, and garlic to the pan. Sauté for an additional 3-4 minutes until the mushrooms are tender.
  • Pour in the white wine and let it reduce by half.
  • Stir in the chicken stock, double cream, shredded chicken, and half of the freshly grated parmesan.
  • Combine the drained pasta with the creamy sauce in the frying pan.
  • Transfer the mixture to a large baking dish and sprinkle the remaining cheeses on top.
  • Bake in the preheated oven for 20-25 minutes until the top is golden brown and bubbling.
  • Garnish with freshly chopped parsley before serving.

Notes

Serve with a side of garlic bread for extra indulgence.
