  • 2 tablespoons Fig Preserves optional
  • 4 slices Sourdough Bread
  • 1 cups Fresh Basil Leaves
  • 1.5 cups Shredded Mozzarella
  • 1/4 cup Grated Parmesan
  • 1/4 cup Basil Pesto
  • 2 pieces Heirloom Tomatoes sliced
  • 4-6 cloves Garlic left in skin and smashed
  • Kosher Salt to taste
  • Black Pepper to taste
  • Red Pepper Flakes to taste
  • 2 tablespoons Extra Virgin Olive Oil

How to Make Irresistible Pesto Caprese Grilled Cheese

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the sliced heirloom tomatoes and smashed garlic cloves on the prepared sheet, ready for roasting.
  • Drizzle everything generously with olive oil, then season with kosher salt, black pepper, and red pepper flakes. Roast in the oven for 20-25 minutes, until the tomatoes burst and release their sweet juices.
  • Once your tomatoes and garlic are roasted, carefully slip the garlic out of its skin. Mash the soft cloves into a paste, then mix it with the basil pesto until combined and deliciously aromatic.
  • Butter one side of each slice of sourdough bread. On the unbuttered side of two slices, spread fig preserves if desired. Layer the roasted tomatoes, garlic pesto mixture, shredded mozzarella, and grated Parmesan on top. Place the remaining slices of bread on top, buttered side facing out.
  • Heat 1-2 tablespoons of butter in a skillet over medium heat. Once hot, grill the sandwiches until golden brown and crispy, about 3-5 minutes per side. Keep an eye on them to avoid burning.
  • Slice your grilled cheese in half and serve hot, allowing the warm, melty interior to greet your eager taste buds.
