How to Make Irresistible Orange Cardamom Date Cake

  • Preheat the oven to 350°F (175°C) and position a rack in the center.
  • Brush a 9-inch round cake pan with olive oil, then line the bottom with parchment paper and dust lightly with flour.
  • In a medium bowl, whisk together all-purpose flour, kosher salt, baking powder, and baking soda.
  • In a large bowl, beat together sugar, ground cardamom, and eggs until light and fluffy. Gradually drizzle in olive oil.
  • Add half of the orange zest, fresh orange juice, and milk to the egg mixture. Blend until smooth.
  • Carefully fold the dry ingredients into the wet mixture, mixing on low until just combined.
  • Transfer the batter into the prepared cake pan and sprinkle the remaining sugar on top. Bake for 40 to 45 minutes.
  • Let the cake cool in the pan for about 30 minutes, then invert onto a wire rack to cool completely.
  • Dust the cooled cake with confectioners’ sugar and scatter remaining orange zest on top.
