How to Make Irresistible Orange Cardamom Date Cake
Preheat the oven to 350°F (175°C) and position a rack in the center.
Brush a 9-inch round cake pan with olive oil, then line the bottom with parchment paper and dust lightly with flour.
In a medium bowl, whisk together all-purpose flour, kosher salt, baking powder, and baking soda.
In a large bowl, beat together sugar, ground cardamom, and eggs until light and fluffy. Gradually drizzle in olive oil.
Add half of the orange zest, fresh orange juice, and milk to the egg mixture. Blend until smooth.
Carefully fold the dry ingredients into the wet mixture, mixing on low until just combined.
Transfer the batter into the prepared cake pan and sprinkle the remaining sugar on top. Bake for 40 to 45 minutes.
Let the cake cool in the pan for about 30 minutes, then invert onto a wire rack to cool completely.
Dust the cooled cake with confectioners’ sugar and scatter remaining orange zest on top.
