Instructions
How to Make Irresistible Coconut French Toast
In a large bowl, whisk together the eggs, coconut milk, granulated sugar, coconut extract, and pure vanilla extract until well combined and frothy.
On a large plate, spread the sweetened, shredded coconut evenly.
Heat your griddle to medium (350°F / 175°C). Ensure it's at the right temperature.
Take slices of your French bread and dip them into the egg mixture, soaking for about 15 seconds on each side.
Transfer the soaked bread slices to the plate with the shredded coconut. Press lightly on both sides.
Grease the griddle with butter or coconut oil, and cook the bread until golden brown, about 3-4 minutes per side.
Once cooked, plate your French toast and top with confectioner’s sugar, a drizzle of maple syrup, and tropical fruits.
Notes
