Instructions
Preparing Cookies
Prepare Cheesecake Filling: Cream together cream cheese, egg yolk, vanilla extract, and powdered sugar until smooth. Form balls and refrigerate for 30 minutes.
Make Cookie Dough: Cream butter, granulated sugar, and brown sugar until fluffy. Mix in egg and vanilla until combined.
Combine Dry Ingredients: Whisk together flour, cream of tartar, baking soda, salt, cinnamon, and pudding until blended.
Mix All Ingredients: Gradually add dry to wet ingredients, mixing until just combined.
Assemble Cookies: Flatten tablespoon of dough, place a cheesecake ball in the center, cover with dough, seal, and roll into a ball.
Chill Cookie Balls: Refrigerate the cookie balls for at least 1 hour, preferably overnight.
Bake: Preheat oven to 350°F (175°C). Bake cookie balls for 12-14 minutes until golden. Cool on baking sheet for 10 minutes.
Optional: Dust with cinnamon sugar before serving.
Notes
For a warm treat, microwave each cookie for 10-15 seconds. Experiment with flavors like chocolate chips or flavored cream cheese.
