Instructions
Making the Cookies
Preheat your oven to 350°F (175°C).
In a mixing bowl, beat softened unsalted butter and granulated sugar together until light and fluffy—about 3-5 minutes.
Add a large egg and the molasses, mixing until well incorporated.
In a separate bowl, whisk together all-purpose flour, baking soda, salt, and ground ginger. Gradually mix this dry blend into the wet ingredients to form your dough.
Scoop out the dough using a tablespoon or cookie scoop, roll them into 1-inch balls, and roll in granulated sugar before placing them on a baking sheet lined with parchment paper.
Bake for 9-11 minutes, watching for the cookies to crack slightly on top.
While cookies cool, whisk together melted butter, pure maple syrup, powdered sugar, milk, and a pinch of salt until smooth.
Once the cookies have cooled completely, dip each into the glaze and allow excess glaze to drip off before placing them on wax paper.
