How to Make Irresistible Molten Chocolate Lava Cookies

  • Prepare Hot Fudge Sauce: Start by making your easy one-pot hot fudge sauce. Chill it with added cocoa powder for at least 4 hours until it’s set and ready to use.
  • Cream Butter and Sugars: In a mixing bowl, combine softened salted butter with light brown sugar and granulated sugar. Beat together until the mixture becomes pale and fluffy, about 2-3 minutes.
  • Incorporate Egg and Vanilla: Add the large egg and pure vanilla extract to the creamed butter mixture. Mix until fully combined, creating a smooth batter.
  • Sift Dry Ingredients: In a separate bowl, sift together all-purpose flour, cocoa powder, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined, then refrigerate for 2 hours to firm up.
  • Form Fudge Centers: Roll chilled hot fudge sauce into small balls, then coat them in cocoa powder. Freeze these fudge balls for about 30 minutes to keep them firm.
  • Assemble Cookies: Once your dough is chilled, scoop out portions and flatten them. Place a fudge ball in the center of each dough round, then wrap the dough around to fully encase the fudge. Chill for another 15 minutes.
