Ingredients

For the Bake

  • 300 g Pumpkin Diced into 2cm cubes
  • 500 g Gnocchi Fresh or frozen
  • 100 g Blue Cheese or Soft Goat's Cheese Crumble over the dish
  • 6 leaves Sage Leaves Fresh or dried
  • 200 ml Vegetable Stock Homemade is recommended
  • 100 ml Single Dairy Cream Heavy cream can be used as an alternative
  • 100 g Mozzarella or Cheddar Cheese For topping
  • 50 g Pecans Toasted for added flavor

Instructions

Steps to Make

  • Dice the pumpkin into 2cm cubes for even cooking.
  • Combine diced pumpkin, vegetable stock, and a sprinkle of salt and pepper in the air fryer. Air fry at 170°C for about 15 minutes until soft.
  • Nestle the gnocchi into the pumpkin mixture and add remaining vegetable stock.
  • Crumble the blue cheese or goat's cheese over the dish, add the single dairy cream, and stir to combine.
  • Increase air fryer temperature to 220°C and air fry for 12 minutes until bubbly.
  • Sprinkle mozzarella or cheddar cheese and toasted pecans on top. Air fry for another 2 minutes until cheese is melted.
  • Toss sage leaves in oil and scatter over the dish. Air fry for an additional minute until crispy.

Notes

Serve with a fresh green salad for a complete meal.
