  • 1 cup Diced onion yellow onions recommended
  • 3 cloves Minced garlic fresh garlic for best results
  • 1 tbsp Italian seasoning adjust based on preference
  • 1 tsp Salt adjust as needed
  • 1/2 tsp Ground black pepper freshly cracked is ideal
  • 4 cups Chicken broth low-sodium preferred
  • 14.5 oz Petite diced tomatoes

For the Creamy Mix

  • 1 cup Ditalini pasta can be substituted with other small pasta shapes
  • 8 oz Cream cheese softened for easy melting
  • 1 cup Grated Parmesan cheese freshly grated is best

For the Garnish

  • 1 cup Fresh basil tear leaves before serving

  • Brown the sausage in a large Dutch oven over medium heat for 5-7 minutes, then drain excess grease.
  • Add diced onion, Italian seasoning, salt, and pepper; cook for 1-2 minutes until the onion is translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Pour in diced tomatoes, chicken broth, and ditalini pasta; bring to a boil and cook for about 8 minutes until pasta is al dente.
  • Reduce heat to low, stir in cream cheese and Parmesan, and cook for about 5 minutes until melted.
  • Ladle soup into bowls and garnish with fresh basil before serving.
