In a food processor, pulse together flour, raw cane sugar, kosher salt, and cinnamon. Add cold butter, pulsing until it resembles coarse cornmeal.
Gradually drizzle in cold water until a dough ball forms, then chill for at least 45 minutes.
Preheat your oven to 400°F (200°C). In a large bowl, toss sliced Fiji apples with light brown sugar, kosher salt, cinnamon, nutmeg, ground ginger, lemon juice, and optional rum. Allow this mixture to sit for 10 minutes to develop rich flavors.
Once chilled, roll the dough on a floured surface into a 12-inch round, carefully transferring it to a parchment-lined baking sheet for assembly.
Place the apple filling in the center of the dough, leaving a 2-inch border. Gently fold the edges over the filling. Brush the exposed crust with beaten egg and sprinkle raw cane sugar on top for sweetness.
