Ingredients

For the Casserole

  • 1 lb lean ground beef substitute with ground turkey for lighter option
  • 1 small onion, diced yellow or white onion
  • 2 cloves garlic, minced or 1/2 teaspoon garlic powder
  • 2 cups cooked white rice leftover rice makes it easier

For the Creamy Mixture

  • 1 can cream of mushroom or cream of chicken soup any cream soup will work
  • 1/2 cup milk or beef broth for extra creaminess, substitute with heavy cream

For the Topping

  • 2 cups shredded cheddar cheese divided, can experiment with different cheeses
  • 1 teaspoon paprika smoked paprika can elevate the flavor
  • salt and pepper to taste adjust to dietary needs

For Garnishing (Optional)

  • chopped parsley green onions or chives can be used as alternatives

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned and the onion is soft, about 5-7 minutes.
  • Sauté the minced garlic for 30 seconds until fragrant.
  • Whisk together the cream soup, milk or broth, paprika, salt, and pepper in a bowl until well blended.
  • Combine the cooked rice, beef mixture, half of the shredded cheese, and the creamy sauce in the prepared baking dish; mix well.
  • Top with the remaining cheese, cover with foil, and bake for 20 minutes.
  • Uncover and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Garnish with chopped parsley before serving.

Notes

Serve with a crisp green salad for a refreshing balance. Leftovers reheat beautifully and can be stored in an airtight container for up to 3 days.
