How to Make Decadent Soft Chewy Brownie Cookies

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a saucepan, melt 6 tbsp of unsalted butter with 8 oz of chopped dark chocolate over low heat, stirring until smooth. Let cool slightly.
  • In a bowl, whisk together 1/2 cup of all-purpose flour, 1/4 cup of cocoa powder, 1/4 tsp of salt, and 1 tsp of baking powder.
  • In a large bowl, beat 1/2 cup of granulated sugar, 1/4 cup + 2 tbsp of light brown sugar, 2 eggs, and 1 tsp of vanilla extract until thick and creamy, about 7 minutes.
  • Slowly incorporate the cooled chocolate mixture into the sugar and egg blend, then fold in the dry ingredients until just combined.
  • Scoop the dough onto the baking sheet, leaving space between each cookie. Bake for 11-12 minutes or until tops are crackled.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack and sprinkle with flaky sea salt.
