How to Make Decadent Soft Chewy Brownie Cookies
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a saucepan, melt 6 tbsp of unsalted butter with 8 oz of chopped dark chocolate over low heat, stirring until smooth. Let cool slightly.
In a bowl, whisk together 1/2 cup of all-purpose flour, 1/4 cup of cocoa powder, 1/4 tsp of salt, and 1 tsp of baking powder.
In a large bowl, beat 1/2 cup of granulated sugar, 1/4 cup + 2 tbsp of light brown sugar, 2 eggs, and 1 tsp of vanilla extract until thick and creamy, about 7 minutes.
Slowly incorporate the cooled chocolate mixture into the sugar and egg blend, then fold in the dry ingredients until just combined.
Scoop the dough onto the baking sheet, leaving space between each cookie. Bake for 11-12 minutes or until tops are crackled.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack and sprinkle with flaky sea salt.
Notes
For an indulgent treat, pair with vanilla ice cream.
