Ingredients

For the Base

  • 1 stick Salted Butter
  • 1/3 cups All-Purpose Flour

For the Aromatics

  • 1 medium Yellow Onion
  • 8 ounces Mushrooms sliced
  • 3 cloves Garlic minced
  • 2 teaspoons Fresh Thyme or dried
  • 2 teaspoons Basil or dried
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Red Pepper Flakes
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

For the Soup

  • 6 cups Low Sodium Chicken Broth
  • 1 pound Boneless, Skinless Chicken Breasts
  • 8 ounces Lasagna Noodles broken into pieces
  • 4 cups Baby Spinach
  • 1 can Canned Coconut Milk or Heavy Cream/Whole Milk

For the Toppings

  • 1 cup Shredded Provolone Cheese
  • 1/2 cup Grated Parmesan
  • 4 ounces Prosciutto

Instructions

Base Preparation

  • In a crockpot set to high, melt the salted butter with all-purpose flour for about 5 minutes, stirring to create a rich roux.

Adding Aromatics

  • Toss in the chopped yellow onion, sliced mushrooms, minced garlic, fresh thyme, basil, and oregano. Sauté until fragrant for about 3-4 minutes.

Combining Broth and Chicken

  • Gradually whisk in the low sodium chicken broth, then add the boneless, skinless chicken breasts. Season with red pepper flakes, kosher salt, and black pepper.

Cooking the Soup

  • Cover and let the soup cook on low for 6-8 hours or high for 4-5 hours until the chicken is tender. Shred the chicken with two forks.

Adding Noodles and Spinach

  • For the last 15 minutes of cooking, stir in the lasagna noodle pieces, baby spinach, and coconut milk or cream.

Cheesy Finish

  • Mix in the shredded provolone and grated parmesan cheese, adding extra broth if the soup seems too thick.

Crispy Prosciutto

  • Preheat your oven to 350°F. Spread the prosciutto on a baking sheet and bake for 10-15 minutes, or until crispy.

Notes

Optional: Garnish with fresh herbs for added flavor and color. This soup is also great for meal prep!
