Ingredients

For the Crust

  • 1 crust Quiche Crust Use Easy Whole Wheat or store-bought

For the Filling

  • 2 Tbsp Butter Salted or unsalted based on preference
  • 2 medium Yellow Onions Thinly sliced
  • 1 tsp Sea Salt Divided portions
  • 1 tsp Black Pepper To taste
  • 3 cups Butternut Squash Cubed into ½-inch pieces
  • 1 cup Lacinato Kale Thinly sliced
  • 1 Tbsp Fresh Thyme Chopped
  • 4 large Eggs Whisked
  • 1 cup Milk Whole or 2%
  • 4 oz Goat Cheese Crumble or feta alternative

Instructions

Preparation

  • Preheat your oven to 350°F (177°C). Blind-bake the quiche crust with pie weights for 20 minutes; then remove weights and bake an additional 5-10 minutes until golden brown.
  • Melt butter in a skillet over medium-high heat. Add the sliced onions, salt, and pepper. Cover and cook for about 10 minutes, stirring occasionally, until the onions become soft and translucent.
  • Stir in the cubed butternut squash to the skillet. Cook for another 8-10 minutes until the onions are golden and the squash is tender.
  • Add the thinly sliced Lacinato kale to the skillet. Cook for about 1 minute or until the kale wilts slightly, then stir in fresh thyme and remove from heat.
  • In a bowl, whisk together the eggs, milk, and any remaining salt and pepper until well combined and frothy.
  • Layer the vegetable filling and crumbled goat cheese in the pre-baked crust. Pour the egg mixture over the top until the filling is just covered. Bake for 30-40 minutes, or until the eggs are set but slightly wiggly in the center.
  • Allow to cool slightly before slicing.

Notes

Serve with a dollop of sour cream or a sprinkle of fresh herbs for added flavor.
