  • 4 slices Bacon cooked and diced
  • 2 tablespoons Pesto be generous
  • 2 tablespoons Butter for coating the bread

How to Make Ultimate Creamy Pesto Grilled Cheese

  • Start with two slices of sourdough in a frying pan while the heat is off. Spread butter generously on one side, then flip to position the butter-side down.
  • Next, add 3-4 thin slices of fresh mozzarella on top of one slice of bread.
  • Spoon a heaped tablespoon of vibrant pesto over the cheese. Sprinkle with diced sun-dried tomatoes and crispy bacon pieces, then top with another layer of mozzarella for extra cheesiness.
  • Place another slice of bread on top to create a sandwich. Lightly press down and spread butter on the upper slice.
  • Turn the heat to medium and gently fry each side until golden brown, about 3-4 minutes per side.
  • Transfer your sandwich to a plate, slice it in half, and enjoy it with a warm bowl of tomato soup.

Notes

For an extra kick, add a sprinkle of crushed red pepper flakes before grilling. Prep all ingredients first for smooth assembly.
