How to Make Delectable Blackberry Balsamic & Brie Grilled Cheese

  • In a saucepan, combine blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of kosher salt. Boil the mixture, then simmer while gently crushing the berries until thickened, about 7-10 minutes. Allow to cool in a bowl.
  • Slice the creamy brie cheese into ½-inch pieces. Heat a skillet over medium heat and butter one side of each sourdough slice generously.
  • Once the skillet is warm, place the buttered side of the sourdough in the skillet. Add the brie slices atop it and cook until the bread is golden and the cheese begins to melt.
  • On the unbuttered sides of the remaining bread slices, spread the cooled blackberry jam. Place them jam side down on the melted brie, butter the top slice, and gently flip the sandwich.
  • Continue to cook the sandwich, pressing down slightly, until both sides are golden brown and the cheese is generously oozing out, about 3-5 minutes each side.
  • Remove from the skillet, slice in half, and serve warm. Optionally garnish with a dollop of extra blackberry jam or sprinkle some fresh thyme on top.
