Instructions
Steps
In a large pot over medium heat, brown the beef stew meat until seared on all sides, about 4-5 minutes.
Add the finely chopped onion and minced garlic to the pot. Cook for 3-4 minutes until softened and fragrant.
Stir in the tomato paste and dried thyme, cooking for an additional 2 minutes.
Pour in the red wine, scraping up any browned bits stuck to the pot. Simmer for 2-3 minutes.
Mix in the beef broth, chopped carrots, and cubed potatoes. Bring to a boil, then reduce heat to simmer.
Let the stew simmer uncovered for 1.5 to 2 hours until the beef is tender. Adjust seasoning with salt and pepper just before serving.
Notes
Use fresh garlic and herbs for the best flavor. Adjust thickness as needed by simmering uncovered longer or adding broth.
