Ingredients

For the Batter

  • 1/2 cup Butter or coconut oil for dairy-free
  • 2 large Eggs use flax eggs for vegan
  • 1/3 cup Maple Syrup can substitute with honey or agave

  • 1 cup Almond Milk or any milk alternative
  • 2 cups Rolled Oats quick oats can be used
  • 1 teaspoon Pumpkin Pie Spice substitute with cinnamon, nutmeg, or ginger
  • 2 teaspoons Baking Powder can use baking soda with acid
  • 1/4 teaspoon Salt for balancing flavors

For the Apples

  • 3 medium Apples Granny Smith or Honeycrisp recommended

For the Topping

  • 1/2 cup Walnuts toasted and chopped

For Serving (Optional)

  • 1 cup Greek Yogurt dairy-free option available

Instructions

Making the Bake

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, whisk together the melted butter, eggs, maple syrup, vanilla extract, and almond milk until smooth.
  • Stir in the rolled oats, pumpkin pie spice, baking powder, and salt until well combined.
  • Fold in the diced apples and chopped walnuts.
  • Pour the mixture into the greased baking dish and top with remaining apples and walnuts.
  • Bake for 45-55 minutes until puffed and set, then cool for 10 minutes before serving.

Notes

This dish pairs well with a drizzle of maple syrup or a dollop of Greek yogurt for serving.
