Ingredients

For the Casserole

  • 5 medium Potatoes, thinly sliced Russet potatoes are ideal.

For the Creamy Mixture

  • 1 can Cream of Mushroom Soup 10.7 oz can.
  • 1 can Cream of Chicken Soup 10.7 oz can.
  • 1 can Evaporated Milk 12 oz can.
  • 1/2 cup Regular Milk

For the Topping

  • 2 cups Shredded Cheese A blend of cheddar and mozzarella.
  • 1 can Cooking Spray Prevents sticking in the baking dish.

Instructions

How to Make Hobo Casserole

  • Preheat the oven to 375°F (190°C). Coat a 9x13 inch baking dish with cooking spray.
  • In a large skillet over medium heat, brown the ground beef with diced onions and minced garlic for about 7-10 minutes. Drain excess grease and season with salt and black pepper.
  • Arrange the sliced potatoes in an even layer at the bottom of the prepared baking dish. Add half of the beef mixture on top.
  • In a mixing bowl, combine the cream of mushroom soup, cream of chicken soup, evaporated milk, and regular milk. Whisk until smooth. Pour half over the beef layer and sprinkle half of the shredded cheese on top.
  • Repeat the layers: place remaining sliced potatoes, rest of the beef mixture, drizzle with remaining creamy sauce, and finish with the last layer of cheese.
  • Cover the dish with foil, tenting it slightly. Bake for 1 hour, remove foil, and bake uncovered for an additional 30 minutes until cheese is golden and bubbly.
  • Let the casserole sit for about 10 minutes before serving.

Notes

Optional: Garnish with fresh parsley for added color and flavor.
