Melt butter over low heat or in the microwave. Let it cool slightly.
In a large bowl, whisk together the all-purpose flour, white sugar, baking powder, baking soda, and salt.
In another bowl, combine the buttermilk, vanilla extract, ground cinnamon, and egg. Add the cooled melted butter and mix until smooth.
Gently add the wet ingredients to the dry ones, mixing until just combined.
Heat a skillet or griddle over medium-low heat and add a small pat of butter.
Pour 1/4 to 1/3 cup of batter onto the griddle. Cook until bubbles form (about 2-3 minutes), then flip and cook for another 2 minutes.
