Prepare Chicken: Combine paprika, chili powder, cumin, salt, and black pepper. Season chicken tenders evenly with spices.
Cook Chicken: Heat avocado oil in skillet over medium heat. Cook chicken tenders for about 3 minutes per side until golden brown.
Finish Cooking: Check that chicken's internal temperature reaches 165°F. Let it rest for a few minutes before slicing into bite-sized pieces.
Make Slaw: Mix reserved spices with red cabbage, green cabbage, red onion, cilantro, Southwest dressing, and lime juice. Toss gently to combine.
Prepare Tortillas: Warm tortillas in a dry skillet for about 20 seconds on each side. Spread Southwest dressing in the center.
Assemble Wraps: Layer tortillas with slaw, sliced chicken, avocados, shredded cheese, and optional tortilla chips. Roll tightly and slice in half.
