Preparation
Start by washing your lettuce, and then chop it along with your red cabbage and carrots into bite-sized pieces. Place all the vibrant veggies in a large salad bowl.
In a small bowl, whisk together the rice vinegar, sesame oil, honey or maple syrup, and a pinch of salt and pepper. Taste the dressing and adjust the sweetness or tang as needed.
Drizzle the dressing over your colorful vegetable medley. Gently toss everything together until the salad is evenly coated.
Add a sprinkle of sesame seeds and some chopped green onion on top for an extra burst of flavor and a lovely presentation.
This salad is best enjoyed immediately for the crunchiest experience, but leftovers can be refreshed with another toss.
